Its construction time again here at the Meadowmere. We’ve got some lovely updates for the coming seasons!

The Meadowmere is welcoming our brand new Solar project and recent additions to our hotel's court yard.

• Once again the Meadowmere is taking the lead with environmentally friendly resources. This year the Meadowmere is upgrading to Solar Energy. We’ve already begun installing the new system and 48 solar panels to the hotel. You can check out pictures on our Facebook Fan pages – They are really amazing!
   
• You might also notice the wonderful work we’ve done to our Main Garden Court Yard. We have replaced the gravel path and patio with beautiful stone work. No more rocks in between your toes when you are trying to get to our outdoor hot tub or make a quick dash to the Roman Spa.
   
• A hot new addition to the court yard is our new Main Garden Fire Pit. Guests will be able to enjoy the ambiance of a warm fire as they enjoy the court yard amenities - whether it is a cool summer evening, crisp fall night or a holiday song by the fire!

Nothing says “The Holidays” better then something sweet. We’ve found a tasty treat from Stonewall Kitchen that’s great for your holiday dessert. It’s easy and affordable for everyone to enjoy.

INGREDIENTS

• 10 5X2-inch ice cream sandwiches
• 1 jar Stonewall Kitchen Chocolate Peppermint Sauce
• 1 ½ quarts Chocolate Chip ice cream, softened
• 1 cup whipping cream, whipped and sweetened
• Chocolate curls or crushed peppermint candy for garnish

DIRECTIONS

1. Place ice cream sandwiches side-by-side in a 9X13-inch pan.
2. Spread ½ jar Stonewall Kitchen Chocolate Peppermint sauce over the sandwiches. Heat the sauce in a microwave 20-30 seconds to make it easier to spread if needed.
3. Spread softened chocolate chip ice cream over chocolate sauce layer.
4. Drizzle remaining Chocolate Peppermint Sauce over ice cream layer. Cover and freeze at least 2 hours before serving.
5. Cut into squares and serve with a dollop of sweetened whip cream and garnish with chocolate curls or crushed peppermint candy for garnish.

Recipe Tip! Chocolate curls can be made by running a peeler along the side of a bar of chocolate for a litle extra touch

SERVES 4-6
