Another sea creature that Maine is known for are delicious, fresh shrimp. For many locals and regular visitors,
Mekhong Thai is a favorite spot for Pad Thai. Located on Route One about four miles north of our Ogunquit hotel, the family owned and operated restaurant is a find for Asian cuisine with Maine flair. In this newsletter, we share their famous Pad Thai recipe, complete with shrimp and veggies. Get that Wok ready - it's time for stir fry!
INGREDIENTS:
1/2 - 3/4 cup of pad Thai sauce
1 lbs dried rice noodles
8- 10 large Maine shrimp, peeled, deveined and cooked*
1/4 cup roasted peanuts, ground
1/2 cup bean sprouts
1 bunch of scallions, thinly sliced
1/4 cup preserved turnips or cabbage, ground (optional, but yummy!)
2 Tbsp. dried baby shrimp (optional)
Dried chilies to taste (optional, but that's where the spice is!)
1 Egg, beaten
Peanut Oil
3-4 lime wedges
DIRECTIONS:
1. Soak noodles in cold water for 30 minutes or until soft. While soaking, boil shrimp until cooked (if necessary) and set aside. Slice scallions, chop preserved turnips and grind/shop peanuts (if necessary).
2. Drain noodles and heat the wok with peanut oil
3. Add 1 beaten egg and scramble. Add noodles and cook until translucent.
4. Add half of the bean sprouts, half of the scallions and half of the peanuts. Add all of the shrimp and optional ingredients. Stir fry until vegetables and shrimp are heated through.
5. Add Pad Thai sauce. Start with 1/2 cup and stir fry until excess sauce has evaporated. If too dry, add remaining sauce and stir fry until noodles are completely cooked and excess sauce has evaporated.
6. Turn off heat and put into serving dish/bowl. Garnish with remaining peanuts, scallion, bean sprouts and 3-4 lime wedges.
SERVES: 4
