The state-of-the-art Cooking School is the place to be if you are a novice or experienced cook and want to learn more, if you love to entertain or you just love good food. Chefs from restaurants throughout the area and across the country share their culinary secrets, talents and recipes. They, along with noted cookbook authors and other professional “foodies” will inform and inspire you.

Classes are designed to be fun and informative. Large screen monitors allow for perfect viewing from any seat, and students are encouraged to interact with the chefs, ask questions and just enjoy themselves in a relaxed, informal setting.

SERVINGS 8

INGREDIENTS:
6 lbs. mussels, scrubbed & debearded
¼ cup extra virgin olive oil
2 Tbsp. finely chopped garlic
3 Tbsp. chopped shallots
1 Tbsp. prepared horseradish
2 Tbsp. Stonewall Kitchen Blue Cheese Herb Mustard
¼ cup fresh lemon juice
6 Tbsp. unsalted butter, room temperature
½ cup dry white wine or clam juice
1 Tbsp. finely chopped flat-leaf parsley


DIRECTIONS:
1. Pour the olive oil into a saucepan. Heat over high heat until it is rippling. Add the mussels, toss to coat. Add the garlic, shallots and horseradish and cook for 3 minutes, tossing and stirring.
2. Add the Blue Cheese Herb Mustard, lemon juice, butter and wine to the pan, toss well and bring to a boil. Cover and allow the mussels to steam for 1 minute or until they open.
3. Transfer mussels to a large deep serving bowl and pour the sauce from the pan over them. Sprinkle with the parsley and serve immediately.
