Eco-Update - Ozone Arrives at the Meadowmere!
Imagine washing your sheets every day - Our Green Practices & Eco-Efforts at our Ogunquit HotelNow times that by 250 beds. That's a lot of water to heat and a lot of time to fill a washing machine, wash and dry. And in the summer, we wash all those sheets (and towels and more!) between check out and check in! Naturally, we looked to bring our Environmental Leader program to this area. Ozone cleans using only cold water and far less water overall. This change will save energy and reduce our carbon footprint. Combined with our Towel Reuse program, the Meadowmere continues to expand as a green hotel and as an Environmental Leader. Taste of Maine . . . At Home This Fall

Pumpkin Cheesecake - A Fall Treat & Tradition!
Rich and soothing with a touch of Fall's signature food - The Pumpkin!

YIELD 1 Cheesecake

INGREDIENTS:
1 (12oz) can of pumpkin - Or fresh if you want!
2 (8oz) packages of cream cheese (Room Temperature)
2 cups sugar
1 teaspoon vanilla extract
8 eggs
1 graham cracker pie crust  (in a spring form cheesecake pan)
dash of salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
2 cups evaporated milk

DIRECTIONS:
  1. Preheat oven to 350 F (175 C).
  2. Make a graham cracker crust in one spring form cheesecake pan
  3. Cream Cheese Layer: In a mixing bowl, combine the 2 packages of cream cheese, 1 cup of sugar, and 1 teaspoon of vanilla extract - mix well!
    Beat in 4 eggs.
  4. Pour the mixture in the pie crust.
  5. Pumpkin Layer: In a large bowl, mix the pumpkin, 1 cup of sugar, a dash of salt, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger and 1/2 teaspoon ground nutmeg
Light beat 4 eggs and blend them into the mixture.
Mix in the 2 cups of evaporated milk.
  6. Pour the pumpkin mixture over cream cream cheese layer that is already in the pie crust. Neither stir it in, nor worry about floating it on top. Just gently pour it in.
  7. Bake the pumpkin pie in the oven at 350° for about 70 minutes until firm. The cream cheese layer will bubble up to the surface some; that's fine; it gives it the characteristic appearance.
  8. Cool the pumpkin pie and refrigerate it!
