Taste of Maine  . . . At Home This Spring

Our Recipe Series Continues with . . . Blue Sky's Delicious Charcoaled Skirt Steak with Crush of Green Garlic

Blue Sky - Gourmet Dining in Southern Maine and nearby York BeachIn the heart of the York Beach, on the Short Sands, a historic renaissance has begun. Blue Sky on York Beach fills the dining room with a warm and welcoming design and a spectacular menu executed by internationally recognized chef, Lydia Shire. Old Maine favorites from both sea and land are updated with her style and signature and Dinner is served nightly from 5:30 p.m. Here is a tasty Maine twist for your plate this season!

1 10 ounce skirt steak, per person (Prime if possible)
For the roasted garlic:
2 heads of garlic, separated unpeeled
3 T extra virgin olive oil

  • Gently press the whole head of garlic to separate cloves.
  • Line a heavy sauté pan with aluminum foil allowing enough foil to wrap garlic.
  • Lay the separated cloves in the foil & drizzle with 3 T extra virgin olive oil, salt & pepper.
  • Seal the cloves with the foil to form a tented pouch.
  • Place on a sauté pan or sheet pan & set in slow oven 300-325 degrees F.
  • Roast for 1-1 ½ hours until the cloves are tender. Remove, cool & peel garlic.

For the wasabi aioli:
1 clove garlic, crushed
1 ½ T Dijon mustard
2 egg yolks
½ lemon-juiced
1 ½ C Canola oil
½ C extra virgin olive oil
3 T wasabi powder with enough water added to make a paste

  • Whisk yolks, lemon juice & Dijon until ribbony.
  • Slowly drizzle in canola oil whisking as you drizzle.
  • Add extra virgin oil, wasabi paste, smashed garlic clove, salt & pepper.
  • Strain garlic from aioli after one hour.

Green Garlic Sauce:
½ T cumin seeds-lightly toasted
½ T coriander seeds-lightly toasted
3 cloves garlic
1 C cilantro springs
1 C Italian parsley sprigs
2 ounces white wine vinegar
1 C Canola oil
Salt & pepper to taste

(In early spring, we substitute some of the parsley & cilantro with green garlic that is quickly blanched in salted water & refreshed in an ice bath. The garlic may also be adjusted depending on the strength of the green garlic.)

  • Combine ingredients in a blender & mix until smooth. Season with salt & pepper.

Blue Sky - One of the Seacoast's Fine Dining RestaurantsTo prepare:

  • Generously season both sides of the skirt steak with salt & pepper.
  • Heat a 10 or 12 "sauté pan (I like cast iron) over medium high heat.
  • While pan is heating up, place 4-5 cloves (per person) of roasted garlic in a pan & gently warm.
  • Add a small drizzle of canola oil or clarified butter to the heated sauté pan & carefully place steak in pan-searing side with the fat first. You can also sear skit steak over an open charcoal grill, but for home use, a heavy sauté pan works well. The steak needs to develop a nice dark crust before it is turned over. Depending on the thickness of the steak, a true

Medium rear is best achieved when both sides have been seared well and the steak is then removed from the pan and allowed to rest for 3- 5 minutes.

Serve steak with a generous spoon of the green garlic sauce, a drizzle of the wasabi aioli and garnish if you wish with *roasted chives or snipped parsley…

*roasted chives are made by drizzling a few drops of olive on chives with a bit of salt. The chives are laid out flat on a sheet pan and lightly roasted until they become crisp.
