In this December 2007 issue, the off season is full of energy for us. Winter is when we keep on improving our hotel – using your feedback to continue to make the Meadowmere a special place to be. Even better, this winter we gear up for our Ogunquit Resort’s 25th Anniversary in 2008.

Eco-Awards - Ogunquit 2007 Recycler of the Year was presented to The Meadowmere Resort. As Ogunquit’s First Environmental Leader Hotel, we thank you, our guests, for our eco-success. YIELD: Use aluminum shallow half pans (Recipe makes 2 pans)

INGREDIENTS:
2 loaves white bread
2 cups dry cranberries
12 eggs
1 cup melted butter
3 cups heavy cream
1cup sugar
1 tsp vanilla extract
1 tsp almond extract
1 tsp cinnamon
Cinnamon sugar on top

METHOD & PREPARATION:
Pre-heat oven to 325 degrees F
Butter pans lightly
Cut bread into 1 inch slices and toast for 5 to 10 minutes
Cut bread into large chunks and put into pans
Combine eggs, cream, milk, sugar, extracts. Whisk until well combined.
Add cranberries and let sit for 5 minutes.
Add to bread and toss- be sure to evenly distribute cranberries among bread, then let sit for 5 minutes. Sprinkle with cinnamon and sugar.
Bake for 45 minutes
