Jonathan's Braised Lamb - A Guest Favorite on Chilly Fall Nights!

Jonathan's Restaurant is a guest staple. Like the Meadowmere, this family owned and operated business has been in Ogunquit for generations. Adjacent to the resort, Jonathan's offers steaks, prime rib, chicken, seafood, and Maine's famous lobster. INGREDIENTS:

  • 1 Leg of Lamb or 3 Lamb Shanks
  • 1 Carrot, diced small
  • 3 Celery Stalks, diced small
  • 1 Medium White Onion, diced small
  • 7 Cloves of Garlic, sliced
  • 2 Cups of White Wine
  • ½ Cup of Demi Glaze
  • 1 Sachet de espice
  • Salt & Pepper to taste
  • ½ Cup Olive Oil

Set in Ogunquit, Jonathan's Main Dining RoomMETHOD & PREPARATION:

  1. Heat Olive Oil in a pot with large surface area & tight fitting lid (Dutch Oven works best)
  2. Season Lamb to taste, add to pot
  3. Sear all sides until Dark Brown
  4. Remove Lamb & set aside
  5. Add Carrot, Celery, Onion & Garlic
  6. Cook vegetables on medium high heat until tender (Approximately 2 minutes)
  7. Add white wine & simmer for 5 minutes, then add Demi Glaze
  8. Return Lamb to pot, cover & cook in a 350 degree oven for 2 hours or until meat is fork tender
  9. Remove Cover & continue to cook for 15 minutes or until sauce thickens, then remove Lamb & take the meat off the bones
  10. Pour vegetables & sauce through a strainer
  11. Combine sauce & meat

Serve with desired accompaniments - perfect on a chilly Fall night!
