Ye Old English Burger - A Meadowmere Summer Classic
YIELD 6 Burgers

INGREDIENTS:

• Fresh course ground sirloin beef patty - 36 oz *
• Salt
• Pepper
• English Muffin - 1 package of 6
• Sharp Cheddar Cheese - Sliced 1/4 inch thick
• Vidalia Onion - 2 large onions
• Butter - Enough to saute onions 
• Sugar 
• Burger Toppings - Pickles, Lettuce, Tomatoes - Chef's choice!

*Skip the Lean or 7% - It makes for a dry burger. Work with what is fresh and has a medium fat percentage - It gives your burger the juice!

BURGER DIRECTIONS:

1. Using 6 oz of ground sirloin softly form 1/2 inch thick round patties. Mix gently and handle as little as possible - It helps your patties stay together.
2. Season both sides of the patties to taste with Salt & Pepper - Add a special seasoning if desired! We suggest Stonewall Kitchens for Maine Made seasonings. 
3. Heat grill as hot as it will go - This is key to the juiciness
4. Gently place patties on grill, quickly covering to retain the heat
5. Wait! Be careful not to flip the burger too early - it will fall apart. The patty, as it chars, will naturally release from the grill. When it does, flip it. Total wait - about 1 minute.
6. Repeat the waiting process in step 5 for the other side
7. After the second flip, turn down the heat and wait another 2-3 minutes or until no pink is left.
8. Flip a third and final time. Wait 2-3 minutes or until done. 
9. Remove burgers from heat and wait 1-2 minutes to serve - or the distance from the grill to dinner table.

TOPPING DIRECTIONS - Make while burgers are grilling!

1. Sliced Vidalia onions approximately 1/8 to 1/4 inch thick, preferably as rings
2. Saute sliced onions over medium heat in butter
3. As onions soften, sprinkle with sugar to caramelize and brown
4. As onions caramelize, toast English Muffins
5. After onions caramelize, remove from heat and allow 1-2 minutes to cool.
6. Place cooked patties on freshly toasted English Muffins
7. Top with 1/4 thick cheddar cheese, sweet caramelized onions
8. Add lettuce, tomato, pickles and other toppings of Chef's choice
9. Enjoy your juicy Old English Burger!
