YIELD: 8 Servings

INGREDIENTS:
2 Cups of Heavy Cream
2 Cups of Light Cream 
3/8 Cups of Sugar
8 Egg Yolks
1 Cup of White Chocolate Chips

METHOD & PREPARATION:

1. Pre-heat oven to 325 degrees F
2. Mix yolks with sugar. Set aside.
3. Layout 8 custard dishes in pan deep enough to hold 1 inch of water.
4. Heat light & heavy cream in saucepan until steeping
5. Take cream mix off stove and whisk in chocolate chips
6. Slowly add cream mix to egg mix. Mixture should be smooth. 
7. Fill custard cups
8. Add hot water to pan for water bath 
9. Cook for 2 hours or until set
