Welcome! Happy Travels!

"It was one of those perfect autumnal days which occur more frequently in memory than in life." ~ P.D. James ~

Don't get us wrong, we love the hustle and bustle of summer, but as the season turns to fall, the fun really begins at the resort. Our packages return and the shopping sales begin. Restaurants host wine dinners (Check out our online calendar for some of these!) and Marginal Way is at its best - with swirling waves from summer storms. The trees light up with brillant reds, flashy yellows and warm ambers. The nights cool down for comfortable rest. And finally, the best part - homemade apple cider scents the lobby as we welcome you to Maine!

With wishes to see you soon!

Taste of Maine . . . at Home

Julie's Real Raspberry Maple Vinegarette Salad - a great side or a light meal!

INGREDIENTS:http://www.sportalicious.com/07222003/raspberries.html
1 cup white wine vinegar
1 cup red wine vinegar
1/2 cup raspberries (washed)
1/2 cup olive oil
1/2 cup vegetable oil
1/2 cup maple syrup
3 Tablespoons toasted pine nuts
2 Tablespoons dry tarragon leaves (4 if fresh)
2 Tablespoons Dijon mustard
Dash of salt to taste
Mixed Greens (preferrably Mesculin Mix) - enough to fill ya!
1/4 cup crumbled blue cheese
Red onion sliced in rings (optional)
Lobster (Two 1 1/4 lb fresh cooked or 1 lb fresh picked in seafood section at your local market) - the true Mainer way!

DIRECTIONS:
1. Prepare a real raspberry vinegar: Combine red and white vinegars and raspberries. Cover and let sit for 48 hours. Strain the vinegar and store at room temperature. You can use commerical raspberry vinegar, but try making your own - it got much better taste!
2. Make Maple-Raspberry Dressing: Whisk together in a bowl the 1/2 cupof raspberry vinegar, oils, maple syrup, mustard, tarragon and salt.
3. Wash and drain lettuce. Toss in a large bowl with 3/4 cup of dressing (or enough to cover the lettuce). Top with blue cheese, sliced onion rings and pine nuts. Add more veggies if you like - the dressing is great with tomatoes, cucumbers and fresh mushrooms!
4. For the true Mainer at Lobster - keep reading . . .http://www.visualgui.com/index.php%3Fm%3D200407
Cook a live lobster in a large pot with 1 cup of lightly salted boiling water (yep - this is steamed lobster!). Keep boilng pot covered for 15 minutes. Take Lobster out. Crack the claws and split the tail with a sharp knife (careful!) to obtain the meat. Cut lobster meat into large chunks and place on top of salad. If not up for a true Maine lobster, try chicken or shrimp.
