Russ at
Jonathan's makes these fabulous crab cakes - Right next door. There's nothing like a little seafood when making a trip to Maine. This recipe is perfect as the days get longer and the temperatures warmer. Just think, a good crab cake, your favorite summer drink and an ocean breeze are just a few weeks away!

4 Cans lump crab meat - or equal amount fresh Maine crab!

1 Medium red pepper, diced
1 Medium green pepper, diced
1 Medium red onion, diced
3 stalks of celery, diced
3 tsp your preferred seafood seasoning - A suggestion is Old Bay, but there are plenty to experiment with!
4 eggs
1 1/2 cups Panko bread crumps
1 Tbs Dijon mustard
3 Liquid cups of Ritz crackers
3 Liquid cups of bread cumbs
3 Cup celery
3 Cup onions
3 Cup peppers
DIRECTIONS:
Mix all ingredients together in a large bowl except the Panko. Form crab cakes in roughly 4oz (palm sized) portions. Roll in Panko & pan fry until golden. Place on paper towels to remove any excess oil from frying. Serve promptly.

CHILI LIME AIOLI INGREDIENTS:
1 Cup mayonaise
4 Tbs sour cream
4 cloves minced garlic
1 Tbs chili paste
2 Limes, juiced
